SOFT FRUIT CRȆPES

Ingredients

For the crȇpes:

125 gr plain flour
250 ml milk
3 eggs
a pinch of salt

Fort he filling:

1 tbsp sugar
a lump of butter
orange zest
10 cl of orange juice
soft fruit
strawberries
10 cl brandy
10 cl Grand Marnier
10 cl Cointreau

All fruit can be substituted with any season fruit or ripe fruit you already have at home. In the same way, you can use any liqueur you have instead of those indicated in the list.


Preparation

Prepare the batter for the crȇpes by whisking in a bowl the eggs with the milk. Sprinkle the flour into it continuously whisking to avoid crumbs. Let it rest for about 30 minutes. Take some batter and pour it into a  pan with hot oil. Cook on both sides for about 30 seconds. When ready, leave the crȇpes aside. Put another pan on the fire and add two tablespoons of sugar. Let it caramelize; then drop a lump of butter into it and melt it with the sugar. Add the orange zest and then the orange juice. Consequently put in  the fruit you have chosen (in the list soft fruit is indicated). When the fruit is warm and softened, flambé with some brandy. Now it is time to insert the crȇpes, fill them with the sauce and the fruit and fold them in a fan. Serve the dish hot with spoon and fork. You may garnish it with some icing sugar.
