ECO CITRUS FRUIT CAKE
250 g fruit flesh (from blended fruit: 2 oranges, 1 apple and 1 carrot)
200 g flour
150 g sugar
150 g cane sugar
1 bag baking powder
½ organic lemon
100 g vegetable butter free from hydrogenated fats
1 glass of soy milk
Blend the apples, carrots, ginger and peeled oranges in a food processor. Put the fruit flesh from the fruit leftovers aside. Mash the banana in a bowl and add the grated lemon zest.
Squeeze the lemon juice onto the fruit flesh and mix all the ingredients together.
In another bowl pour the batter into a greased cake pan and bake at 180° C for 35 minutes.
Remove from the oven and taste it with all the family.
