BREAD CAKE

Preparaion time: 45 minutes    
                                 
Cooking time: 60 minutes
 
Ingredients
 
400 g bread (Altamura)
400 g   milk
100 g   raisins
1   lemon zest
100  g  butter - at room temperature
100 g sugar
30 g bread crumbs
1  egg
20 g Grappa
50 g pine seeds
100 g plain flour
water.
 
Preparation

Remove the bread crust  from the soft part to obtain  300 g of crumbs. Cut the crumbs into pieces and put them in a bowl with the milk and leave them to soak for about 10 minutes. Soak also the raisins in some water for 5 minutes . In the meantime, grate the zest of the lemon and grease  a 22 cm round baking tin  with some butter,  sprinkling it all around with some breadcrumbs.
After 10 minutes, squeeze the crumbs,  add the sugar and the egg, then the softened butter cut into  small pieces. Mix all ingredients with a wooden spoon to get a homogenous texture.
Add Grappa, the drained raisins, the grated  lemon zest, the pine seeds and finally the sieved flour. Mix the ingredients very well until you obtain a consistent compound and put it into the baking tin. With the back of a spoon, distribute and level the mixture evenly.
Bake the cake at 180°C for about 60 minutes until  golden brown. Remove the cake from the oven and let it cool. It's a real treat!
