APPLE CHEESECAKE

Ingredients

For the biscuit base
110g    biscuits ( digestive), crushed
45 ml melted butter

For the filling
1kg softened cream cheese ( philadelphia)
275g  brown  sugar
4 eggs
1 tsp  vanilla (two bags  of vanillin )
1 teaspoon lemon juice

For  the topping
30g  plain  flour
50g sugar
2 tsp  brown  sugar
½ tsp  ground cinnamon
½ tsp  cloves
100g  apples,  finely sliced  
Preparation method:

For the biscuit base
Mix  the crushed  biscuits and the melted butter together  in a bowl. Press the  mixture into the base of a  20cm-diameter springform tin  ; put it  in the fridge.

For the filling
In a  mixer fitted with a hook leaf  attachment  beat  the cream cheese and the brown  sugar at  medium-high speed  for about 3 minutes, until  smooth.  Add the eggs, one at a time, beating the mixture after every addition. Incorporate the vanilla and the lemon juice. Pour the mixture on the chilled biscuit base and  level the surface.

For the topping
Tip the flour, the brown  sugar,  the cinnamon and the ground cloves into a bowl. Add the apple slices and gently move the whole  until the apples are coated  with  the flour, sugar and  spices  compound. Decorate  the cheesecake with the apple slices. Bake at 180°C for 40/55 minutes   until  brown  and   when a pick inserted into center comes out clean. Remove the cake from the oven,  set it aside  to cool  for 2 hours, then put it in the fridge for another 6 hours before serving.
